Saint Lawrence Spirits Releases 3 Two-Year-Old Spirits

Saint Lawrence Spirits, Clayton, N.Y., released Kentucky Son Straight Bourbon, Icebreaker Whiskey, and Straight Rye Whiskey.

They have been hibernating in barrels for two years (for almost as long as the Distillery has been up and running). The Bourbon’s namesake is inspired by a true “Kentucky Son”, Dr. Don Leopold. As one of the top botanists in the country, Leopold lent his assistance and advice to the distillers when they first began working on their whiskeys in 2016. Kentucky Son Straight Bourbon features notes of buttery biscuits and vanilla while offering a deliciously smooth taste.

The Icebreaker Whiskey has been maturing in a barrel thoughtfully named “Harvey Dent” by the distillers. “We are constantly working with two products at a time, one that we are cooking and one we are distilling. In the confusion of a busy day, I ended up switching the two products of the day internally and made the serious mistake of blending two totally different products together in the same barrel, essentially making it as “two faced” as fictional super-villain Harvey Dent. After running the numbers and determining the percentages of the blend, we mixed up a sample and we were pleasantly surprised! The blend offers a unique flavor profile of butterscotch and orange blossom.” Two more barrels were filled, and the Icebreaker will be released in small batches at barrel proof each winter.

The Straight Rye Whiskey is a single barrel, single batch, single run product with only 123 bottles available. The Straight Rye Whiskey is the first and the last of its kind, thus being deemed the “Alpha Omega” of Saint Lawrence Spirits Whiskey.
