Still Austin Whiskey Co. is getting set to open at the Yard at St. Elmo, a development in Austin, Tex., that will include Austin Winery and St. Elmo Brewing. Here’s the thing: Still Austin will be the first distillery actually located in Texas’s capitol city.
Still Austin plans to produce, bottle and serve all types of whiskey, from bourbon to rye to single malt, on site using as many Texas grains as possible. “We want to make whiskeys that represent the flavors around us. Have a whiskey with terroir to it,” says Kris Bohm, the distiller.
It will have the capacity to produce a barrel of whiskey an hour using a 50-foot column still.
