Shevlin says she takes the “romance” out of the distillery business, which is saying something since every liquor bottle seems to have a backstory these days. “I make sure that people who want to start a distillery have a good business plan and the capital they need to get to market,” Shevlin says. Syntax Spirits’ Mistress of the Stills Explains Molecular Gastronomy
Heather Bean doesn’t think a person needs to have degrees in mechanical and chemical engineering to distill spirits but admits that the fact she has them doesn’t hurt. Bean opened Syntax Spirits in 2010, building the distillery from the ground up inside an industrial warehouse east of downtown Greeley. Making authentic grain-to-glass craft spirits in handmade stills — thanks to Bean’s engineering know-how — Syntax also keeps it green by sourcing grains locally from within 100 miles of the distillery. A recent rebranding effort adds another element to reinforce Bean’s background — accurate depictions of chemical molecules grace bottles of Straight Bourbon Whiskey, Crystal Vodka, Rose Gin, and Heavy Rum.
