Omission Brewing Co. plans to promote its year-round portfolio of great-tasting beers during Celiac Awareness Month in May. Omission, which makes its gluten-removal process, along with the test results of every batch of beer brewed, available on its website.
During the brewing process, an added brewing enzyme, Brewers Clarex™, is added to the fermentation tank, breaking apart gluten protein chains to allow for bottling in an enclosed environment to eliminate cross contamination. This method has been validated by the AACC International and the American Society of Brewing Chemists to result in gluten levels less than 20ppm per batch, ensuring the result is a great brew that’s ready for any occasion.
“Omission started out as a passion project after my wife was diagnosed with celiac disease,” said Omission Brewmaster Joe Casey. “I remember the day she took her first – and second! – taste of Omission, and ever since then Omission has been winning consumers over for its great taste.
