City Winery Washington DC said it is collaborating with fellow northeast Washington beverage producer Supreme Core Cider to release Ivy City Rosé cider. It’s described as an aromatic winter cider that will debut and will be available canned and on tap, while the limited supply lasts. The fusion brings to life a robust local partnership between members of the vibrant ‘makers’ community that has become the foundation of Ivy City’s culinary scene.
City Winery Washington DC Head Winemaker Adam Drici worked closely with Supreme Core Cider Founders Kyle Crosby and Will Sullivan to craft the 8% ABV Ivy City Rosé, using a base of fermented local apples sourced within a two-hour drive of DC, then steeped for a month in a blend of cider-aged cabernet sauvignon and cabernet franc pomace from City Winery’s grapes. Drici used pomace – the fruit left after crushing grapes when making wine – from grapes sourced from the winery’s longtime vineyard partners in California and Washington State.
The brand-new cider is the first of several planned collaborations for Supreme Core Cider. The acidity and color imparted from Cabernet Franc and Cabernet Sauvignon pomace creates delicious flavors of tart strawberry, warm raspberries, and subtle tannins, resulting in a deep hued and refreshing gluten free option for cider lovers.
